A Meal with Meaning: Gems Bring Joy to Teens at Camp Rainbow Gold

July 22, 2025

On a warm summer evening in late June, laughter echoed across the rolling hills of rural Idaho as dozens of teens gathered around the dining hall at Camp Rainbow Gold. Their plates were piled high during one of the most beloved traditions of the summer: Tater Tot Casserole Night.

The annual tradition, served once during each camp session, is more than just a fun meal — it’s a symbol of resilience, joy, and the healing power of community. Thanks to Simplot, the iconic dish was once again a centerpiece of connection and celebration.

Simplot provided cases of its signature Gems, the essential ingredient in the Tater Tot Casserole. This year’s feast, held during the camp’s teen session, included classic, vegan, and gluten-free versions to ensure every camper could enjoy the experience.

“It was so inspiring to see all the kids enjoy this special meal together,” said Simplot Senior Communications Manager Katie Wegley, who attended the event with her daughter, Ayla. “Simplot is happy we could support Tater Tot Casserole Night again. Camp Rainbow Gold certainly shares our deep Passion for People, and we’re glad we could help make this night a huge hit with the kids.”

Camp Rainbow Gold is located at the Hidden Paradise medical camp complex in Fairfield, Idaho. The organization has served families for more than 40 years, providing events, programs, resources, and support to Idaho families who have experienced a pediatric cancer diagnosis. Each summer, children and teens who have experienced cancer come together to enjoy traditional camp activities like swimming, archery, biking and dancing. Among these activities, special moments like Tater Tot Casserole Night truly stand out.

The casserole tradition began years ago, with an infamous first tater tot casserole that did not go over well with campers. One longtime physician volunteer even wrote a camp parody song about it! But what started as a joke has grown into a cherished event, filled with laughter, comfort food, and shared memories.

Another tradition during meals at Camp Rainbow Gold involves passing around a funny hat and sharing “Shines.” These spontaneous public compliments celebrate kindness, courage, or simply a good laugh. On Tater Tot Casserole Night, the first Shine went to the kitchen staff for their hard work and amazing meal. The dining hall erupted in applause.

Simplot’s involvement with Camp Rainbow Gold is just one of many ways the J.R. Simplot Company Foundation invests in the well-being of communities in Idaho and around the world. Simplot regularly partners with local food banks, schools, and nonprofits, and proudly supports the Ronald McDonald House — helping families stay close during a child’s medical treatment.

“Community is at the heart of everything we do,” Wegley said. “Whether it’s supplying nourishing food or helping families find comfort and care, we’re committed to showing up — with resources, with time, and with heart.”

As the sun set on camp and the casserole trays were scraped clean, one thing was clear: Tater Tot Casserole Night started with food but ended with something far bigger — joy, connection, and a reminder of what truly feeds the soul.
